2 Tblsp Olive Oil
1 Tblsp Butter
2 cloves garlic smashed
Oyster Mushrooms
Sprig of fresh Thyme
Put oil and garlic in cast iron fry pan, heat on low.
Shred the mushrooms into similar size pieces, place in pan, increase temperature to medium but make sure no smoking occurs.
Turn mushrooms every few minutes, when they start to turn brown (10 mins), reduce heat to low and add butter. Continue cooking and turning for another 10-15 minutes until edges start to turn crispy.
Add a few leaves of Thyme from a fresh sprig and serve as a side dish with soups, steak, what ever. I also like to add a squirt of lemon juice if using as a garnish on soup.
