Timing:
Harvest mushrooms when the caps begin to flatten but before they fully open.
Techniques:
Use a sharp knife to cut mushrooms cleanly at the base.
Tear off cleanly, taking all fruit body down to the substrate.
Post-Harvest Handling:
Immediately transfer mushrooms to a cool, dry storage area.
Clean the fruiting room after each harvest to maintain hygiene. Perforated totes work well, it is important to have some airflow stop them from getting saturated but hold enough humidity to keep fresh. Slightly drying is the way i look at it, this helps prevent deterioration
